You can always just download the latest mermaid and drop that into your project. This plugin shipping with it is just a convenience anyway. It won't automatically overwrite your existing files anyway.

(Regardless I should make it easier to update in this repo, right now it's a bit manual. But also ... I won't get to it this week)

As mdook-mermaid actually does not care which version it installs, should we maybe ask the user whether they want to install instead the latest version on mdbook-mermaid install?
